Banana Muffins with Foam Bananas 🍌🍌

These muffins were made after finding a bunch of black bananas in the kitchen and I didn’t want them to go to waste!!
Ingredients
- 190g GF Plain Flour 
- 1 tsp Baking Powder 
- 1 tsp Baking Soda 
- 1/4tsp Xanthan Gum 
- 1 tsp Ground Cinnamon 
- 1/2 tsp Ground Nutmeg 
- 3 Large Ripe Bananas 
- 85g Butter 
- 135g Brown Sugar 
- 1 Egg 
- 30ml Milk 
Method
- Mix the gluten-free flour, baking powder, baking soda, xanthan gum, cinnamon, and nutmeg together in a bowl. 
- In another bowl mash the bananas. Then add melted butter, the brown sugar, egg, and milk. 
- Add the dry ingredients to the wet ingredients and mix. 
- Spoon the batter into cupcake cases up to the top. 
- Put in the oven at 200°C for 25 minutes, until a skewer comes out clean. 
- Leave on a wire rack to cool. 
- Decorate with buttercream (100g Icing Sugar, 50g Butter) and Foam Bananas!
