These muffins were made after finding a bunch of black bananas in the kitchen and I didn’t want them to go to waste!!
Ingredients
190g GF Plain Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/4tsp Xanthan Gum
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
3 Large Ripe Bananas
85g Butter
135g Brown Sugar
1 Egg
30ml Milk
Method
Mix the gluten-free flour, baking powder, baking soda, xanthan gum, cinnamon, and nutmeg together in a bowl.
In another bowl mash the bananas. Then add melted butter, the brown sugar, egg, and milk.
Add the dry ingredients to the wet ingredients and mix.
Spoon the batter into cupcake cases up to the top.
Put in the oven at 200°C for 25 minutes, until a skewer comes out clean.
Leave on a wire rack to cool.
Decorate with buttercream (100g Icing Sugar, 50g Butter) and Foam Bananas!
