GF Vanilla Cupcakes with Raspberry Buttercream

Delicious Fluffy Cupcakes with Natural Raspberry Buttercream.

Ingredients

  1. 165g Unsalted Butter

  2. 165g Caster Sugar

  3. 165g GF Plain Flour

  4. 2 tsp Baking Powder

  5. 1 tsp Xantham Gum

  6. 2 tsp Vanilla Extract

  7. 2 Large Eggs/3 Medium Eggs

  8. Icing: 100g Butter, 200g Icing Sugar and Raspberries to Strain

Method

  1. Mix the butter and caster sugar together.

  2. Add the the flour and the eggs.

  3. Add the baking powder, Xantham gym and vanilla extract

  4. Put in the oven at 180 degrees for 20 minutes.

  5. For the Buttercream, strain the raspberries so you don’t get any pips, and add to the butter and icing sugar together.
