Gluten Free Cadbury Caramel Nibble Cookies 🍪🍪

These cookies are really easy to make and only take 10 minutes in the oven! The addition of caramel nibbles made them so gooey!! These were inspired by @glutenfreealice’s recipe for triple chocolate cookies.

Ingredients

  1. 100g Margarine

  2. 75g Brown Sugar

  3. 50g Caster Sugar

  4. Vanilla Paste

  5. 1 Medium Egg

  6. 160g Gluten Free Self-Raising Flour

  7. 5tbsp Cocoa Powder 

  8. 1 Packet of Cadbury Caramel Nibbles

Method

  1. Mix together the margarine, brown sugar, caster sugar and vanilla paste.

  2. Add an egg to the mixture and combine.

  3. Sift in the GF self-raising flour.

  4. Split the mix in two and add cocoa powder to one.

  5. Roll the dough into 12 small balls and place on a lined baking tray, well spaced out.

  6. Chop the caramel nibbles into halves and sprinkle onto the tops of the mixture.

  7. Put in the oven at 180°C for 10 minutes.

  8. Take out of the oven and leave to cool until hardened.
