Gluten Free Carrot Cake

A yummy, partially Easter-related carrot cake! I’ve included the recipe for the cake below and the icing can be of your choosing! I made Buttercream with grated carrots and a circle of crushed Walnuts and Cashews! The decorations are indeed made of carrots and cucumber!! 🥒🥕
Ingredients
- 225g Butter 
- 225g Brown Sugar 
- 4 Eggs 🥚 
- Grated Rind of Orange 
- 15ml Lemon Juice 
- 175g GF Self Raising Flour 
- 350g Grated Carrot 
- 1 tsp Baking Powder 
- 1 tsp Xantham Gum 
- Mix the butter and sugar together. 
- Beat in the egg yolks and add lemon juice. 🍋🍋 
- Sift in the flour, and add baking powder and Xantham Gum. 
- Whisk the egg whites and fold them into the mixture adding the carrots and orange rind. 🥕🍊 
- Pour into the tin and bake at 180 degrees Celsius for 1 hour 30 minutes.
