A yummy, partially Easter-related carrot cake! I’ve included the recipe for the cake below and the icing can be of your choosing! I made Buttercream with grated carrots and a circle of crushed Walnuts and Cashews! The decorations are indeed made of carrots and cucumber!! 🥒🥕
Ingredients
225g Butter
225g Brown Sugar
4 Eggs 🥚
Grated Rind of Orange
15ml Lemon Juice
175g GF Self Raising Flour
350g Grated Carrot
1 tsp Baking Powder
1 tsp Xantham Gum
Mix the butter and sugar together.
Beat in the egg yolks and add lemon juice. 🍋🍋
Sift in the flour, and add baking powder and Xantham Gum.
Whisk the egg whites and fold them into the mixture adding the carrots and orange rind. 🥕🍊
Pour into the tin and bake at 180 degrees Celsius for 1 hour 30 minutes.
