Gluten Free Carrot Cake

A yummy, partially Easter-related carrot cake! I’ve included the recipe for the cake below and the icing can be of your choosing! I made Buttercream with grated carrots and a circle of crushed Walnuts and Cashews! The decorations are indeed made of carrots and cucumber!! 🥒🥕

Ingredients

  1. 225g Butter

  2. 225g Brown Sugar

  3. 4 Eggs 🥚

  4. Grated Rind of Orange

  5. 15ml Lemon Juice

  6. 175g GF Self Raising Flour

  7. 350g Grated Carrot

  8. 1 tsp Baking Powder

  9. 1 tsp Xantham Gum

  10. Mix the butter and sugar together.

  11. Beat in the egg yolks and add lemon juice. 🍋🍋

  12. Sift in the flour, and add baking powder and Xantham Gum.

  13. Whisk the egg whites and fold them into the mixture adding the carrots and orange rind. 🥕🍊

  14. Pour into the tin and bake at 180 degrees Celsius for 1 hour 30 minutes.
