I fancied making something chocolatey today so decided to make these!! They actually look like proper cookies for a change and are twice the size as usual š I used my old cookie recipe but decided to change it up a bit, so this is my new, tweaked version for everyone to try š¤š¼
Ingredients
100g Caster Sugar
100g Brown Sugar
120g Melted Margarine/Unsalted Butter
1 Medium Egg
260g GF Plain Flour
30g Cocoa Powder
100g Chocolate Chips
Freeze-Dried Raspberries
Pinch of Salt and a Splash of Vanilla Extract
Mix together the sugar with melted margarine (melt this in the microwave for 40 seconds).
Add the egg and vanilla extract to the mixture and mix again!
In another bowl, sieve together the flour and cocoa powder and add the salt.
Add the dry mix to the wet mix, until fully combined.
Add some freeze-dried raspberries and chocolate chips to mixture.
Refrigerate the mixture for 20-30 minutes until cool.
Line two baking trays with baking parchment paper.
Split the mixture into 12, and form into balls, placing 6 on each tray, spaced apart.
Place in the oven for roughly 15 minutes at 180 degrees C.
Remove from oven and leave to cool!
