Gluten-Free Chocolate and Raspberry Cookies šŖš¤š¼

I fancied making something chocolatey today so decided to make these!! They actually look like proper cookies for a change and are twice the size as usual š I used my old cookie recipe but decided to change it up a bit, so this is my new, tweaked version for everyone to try š¤š¼
Ingredients
- 100g Caster Sugar 
- 100g Brown Sugar 
- 120g Melted Margarine/Unsalted Butter 
- 1 Medium Egg 
- 260g GF Plain Flour 
- 30g Cocoa Powder 
- 100g Chocolate Chips 
- Freeze-Dried Raspberries 
- Pinch of Salt and a Splash of Vanilla Extract 
- Mix together the sugar with melted margarine (melt this in the microwave for 40 seconds). 
- Add the egg and vanilla extract to the mixture and mix again! 
- In another bowl, sieve together the flour and cocoa powder and add the salt. 
- Add the dry mix to the wet mix, until fully combined. 
- Add some freeze-dried raspberries and chocolate chips to mixture. 
- Refrigerate the mixture for 20-30 minutes until cool. 
- Line two baking trays with baking parchment paper. 
- Split the mixture into 12, and form into balls, placing 6 on each tray, spaced apart. 
- Place in the oven for roughly 15 minutes at 180 degrees C. 
- Remove from oven and leave to cool!
