Gluten Free Chocolate Cheesecake

Very excited to present my gluten free Easter-themed Chocolate Cheesecake! 🐰🐣 It was all very chocolately with a chocolate digestive base, chocolate cheesecake filling with added chocolate chunks and then even more chocolate on top!!🐣 And super tasty too!!! I wrote the recipe especially forĀ @hampshirelifemagazine 🌳who published the recipe and a bit about me šŸ‘©šŸ¼ā€šŸ³in their April 2020 edition!

Ingredients

Base: 300g Gluten Free Chocolate Digestive Biscuits150g Butter Cheese Cake: 450g of Chocolate Philadelphia100g of Icing Sugar280ml of Double Cream Topping: 100g White Chocolate and Mini Eggs

Method

  1. Place the chocolate digestives in a bag and smash into crumbs using a rolling pin.

  2. Melt the butter in the microwave for about 30 seconds.

  3. In a bowl mix the digestives and butter together.

  4. Pour the mixture into the base of a lined sandwich tin, making sure to press down the ingredients with a fork to create a strong base.

  5. Leave in the fridge to cool whilst making the topping.

  6. Put the chocolate Philadelphia in a bowl and mix in the double cream and icing sugar.

  7. Keep stirring to make sure everything is mixed in well. Then pour this over the top of the base and leave to set in the fridge overnight.

  8. In the morning, melt some white chocolate and drizzle over the cake and then add a pile of different sized Mini-Eggs to create your nest.
