Gluten Free Millionaire’s Shortbread

These are so good!

Ingredients

  1. 🎸 For the Shortbread Base you will need 200g butter, 100g caster sugar and 300g GF plain flour, 1/2tsp Xanthan Gum.

  2. 🍮 For the caramel you will need a tin of condensed milk (397g), 60ml golden syrup, 165g light brown sugar and 170g butter

  3. 🍫 For the chocolate topping you will need 200g chocolate.

Method.

  1. Line a square tin with baking parchment.

  2. For the base, in a bowl mix the above ingredients until a dough is formed.

  3. Spread the dough in your tin, and bake for 35 minutes at 160 degrees C.

  4. Let the base cool. ❄️❄️

  5. To make the caramel, add the listed ingredients to a saucepan and heat on a medium temperature for 15 minutes whilst stirring continuously.

  6. Pour over the base and leave in the fridge to set for 2 hours.

  7. Melt your chocolate 🍫🍫 and pour over the top of the caramel. Leave in fridge to harden. 🥳🥳
