This cake is really lovely and refreshing for Summer days! I bought the Polenta a couple of years ago and this is the first cake I’ve made with it! Polenta is actually made from maize so it’s naturally gluten-free 🌽
Ingredients
250g Butter
250g Caster Sugar
4 Large Eggs🥚🥚
140g Polenta
200g Plain GF Flour
2 tsp Baking Powder
2 tsp Xantham Gum
2 Large Oranges🍊🍊
1 Lemon 🍋
Method
Cream the butter and sugar together.
Add the eggs and mix well. 💪🏼
Add the Flour, Polenta, Baking Powder and Xantham Gum.
Add the zest and juice of the oranges.
Put the mix into a tin, spreading evenly, then cook for 45 mins at 160 degrees C.
For the icing, use icing sugar and water and add some more orange juice if you wish.
