These shortbreads are so easy to make and they only require 4 ingredients plus the oreos! The oreos are Morrison’s own-brand ones 🙂
Ingredients
250g Margarine.
110g Caster Sugar
360g Gluten-Free Plain Flour
1/4 tsp Xanthan Gum
A pack of gluten-free oreo equivalents.
Method
Mix together the margarine and butter.
Then add in flour and xanthan gum.
Lightly flour a surface and roll out the dough to roughly 1cm thick.
Cut out shapes of your choice and place onto a baking tray lined with parchment paper. Repeat until all the dough is cut!
Lots of websites advise you to put the cut shapes into the fridge for 15+ minutes so that the butter doesn’t melt and won’t expand in the oven. However I skipped this step and they turned out fine!
Put the trays in the oven at 170 degrees until the edges are golden (roughly 20-25 minutes).
Leave to cool on a rack!
