Gluten Free Oreo Shortbread

These shortbreads are so easy to make and they only require 4 ingredients plus the oreos! The oreos are Morrison’s own-brand ones 🙂

Ingredients

  1. 250g Margarine.

  2. 110g Caster Sugar

  3. 360g Gluten-Free Plain Flour

  4. 1/4 tsp Xanthan Gum

  5. A pack of gluten-free oreo equivalents.

Method

  1. Mix together the margarine and butter.

  2. Then add in flour and xanthan gum.

  3. Lightly flour a surface and roll out the dough to roughly 1cm thick.

  4. Cut out shapes of your choice and place onto a baking tray lined with parchment paper. Repeat until all the dough is cut!

  5. Lots of websites advise you to put the cut shapes into the fridge for 15+ minutes so that the butter doesn’t melt and won’t expand in the oven. However I skipped this step and they turned out fine!

  6. Put the trays in the oven at 170 degrees until the edges are golden (roughly 20-25 minutes).

  7. Leave to cool on a rack!
