Gluten-Free Strawberry Cake 🍓🍓

After somehow managing to have four punnets of strawberries in our fridge, I decided to make this strawberry cake! Lots of other recipes I found online tended to over-complicate the whole thing, so I’ve come up with my own simpler version which turned out just as well (..if not better)!!

Ingredients

  1. 200g GF Self-Raising Flour

  2. 200g Caster Sugar

  3. 200g Margarine/Unsalted Butter

  4. 4 Medium Eggs

  5. 1/4tsp of Xanthan Gum and Baking Powder

  6. 125g Puréed Strawberries

For the Icing; 100g Margarine, 200g Icing Sugar and 30g Puréed Strawberries.

(For a more strawberry flavour, you can add half a sachet of Strawberry Jelly Powder to the cake mix, however I decided I wanted mine to be more natural!)

Method

  1. Cream together the caster sugar and unsalted butter in a bowl.

  2. Add in the flour, xanthan gum, baking powder and eggs, one at a time.

  3. Mix together.

  4. In a blender, purée 125g of strawberries. Then add to the mixture.

  5. Pour the mixture into a greased/lined round tin (roughly 9 inches).

  6. Put in the oven for 45 minutes at 180°C.

  7. Leave to cool on a wire rack. Meanwhile cream together the icing sugar and margarine to make the butter cream, then add 30g of puréed strawberries.

  8. Ice the top and enjoy!!
