Gluten-Free Sultana Scones with Strawberry Jam and Clotted Cream 🍓

I hadn’t had gluten-free sultana scones before today because I thought they would be too difficult to make and haven’t actually seen any in supermarkets! I was surprised at how easy they were to make and only took 15 minutes in the oven! Enjoy the recipe🍓

Ingredients (to make 8)

  1. 340g GF Self-Raising Flour

  2. 1tsp Baking Powder

  3. 1/4 tsp Xanthan Gum

  4. 85g Butter

  5. 40g Sultanas

  6. 175ml Milk

  7. 2tsp Vanilla Extract

  8. 1 Egg

  9. Measure out the flour, baking powder and xanthan gum into a bowl.

  10. Add the butter to the dry mix and rub it in with your fingers until the mixture forms breadcrumbs.

  11. Add the sultanas (however many take your fancy!) to the mix.

  12. Add the milk to the bowl and mix until you form a ball of dough.

  13. Flour a work-surface and bring together the dough into a tall, round ball.

  14. Use a cutter (about 5cm diameter) to cut out the scones, and place them on baking parchment paper on a baking tray.

  15. Re-round the dough and repeat Step 6.

  16. Brush the tops of the scones with an egg (or milk alternative) for a golden-brown finish once cooked!

  17. Place in the oven at 200°C for 15 minutes.

  18. Enjoy with clotted cream and a fruity jam 🍓
