Gluten-Free Sultana Scones with Strawberry Jam and Clotted Cream 🍓

I hadn’t had gluten-free sultana scones before today because I thought they would be too difficult to make and haven’t actually seen any in supermarkets! I was surprised at how easy they were to make and only took 15 minutes in the oven! Enjoy the recipe🍓
Ingredients (to make 8)
- 340g GF Self-Raising Flour 
- 1tsp Baking Powder 
- 1/4 tsp Xanthan Gum 
- 85g Butter 
- 40g Sultanas 
- 175ml Milk 
- 2tsp Vanilla Extract 
- 1 Egg 
- Measure out the flour, baking powder and xanthan gum into a bowl. 
- Add the butter to the dry mix and rub it in with your fingers until the mixture forms breadcrumbs. 
- Add the sultanas (however many take your fancy!) to the mix. 
- Add the milk to the bowl and mix until you form a ball of dough. 
- Flour a work-surface and bring together the dough into a tall, round ball. 
- Use a cutter (about 5cm diameter) to cut out the scones, and place them on baking parchment paper on a baking tray. 
- Re-round the dough and repeat Step 6. 
- Brush the tops of the scones with an egg (or milk alternative) for a golden-brown finish once cooked! 
- Place in the oven at 200°C for 15 minutes. 
- Enjoy with clotted cream and a fruity jam 🍓
