I filmed myself making these cupcakes for a follow-along segment in the upcoming #ThinkPinkDay next Wednesday which @southamptonubt is holding for @coppafeelpeople! 🌸 The video will be up next week for people to follow along at home with!
Ingredients
260g Unsalted Butter
260g Caster Sugar
260g GF Plain Flour
2 tsp Baking Powder
1 tsp Xantham Gum
2 tsp Vanilla Extract
4 Large Eggs
Icing: 100g Butter, 200g Icing Sugar and Freeze-Dried Raspberries.
Method
Mix the butter and caster sugar together.
Add the the flour and the eggs.
Add the baking powder, xanthan gum and vanilla extract.
Put in the oven at 180 degrees for 20 minutes.
For the Buttercream, mix the butter and icing sugar together. Sprinkle freeze-dried raspberry on top.
