Gluten-Free Vanilla and Raspberry Cupcakes 🌼🌺

I filmed myself making these cupcakes for a follow-along segment in the upcoming #ThinkPinkDay next Wednesday which @southamptonubt is holding for @coppafeelpeople! 🌸 The video will be up next week for people to follow along at home with!
Ingredients
- 260g Unsalted Butter 
- 260g Caster Sugar 
- 260g GF Plain Flour 
- 2 tsp Baking Powder 
- 1 tsp Xantham Gum 
- 2 tsp Vanilla Extract 
- 4 Large Eggs 
- Icing: 100g Butter, 200g Icing Sugar and Freeze-Dried Raspberries. 
Method
- Mix the butter and caster sugar together. 
- Add the the flour and the eggs. 
- Add the baking powder, xanthan gum and vanilla extract. 
- Put in the oven at 180 degrees for 20 minutes. 
- For the Buttercream, mix the butter and icing sugar together. Sprinkle freeze-dried raspberry on top.
