Gluten-Free White Chocolate and Marshmallow Blondies

INGREDIENTS (MAKES 9)


  • 250g BUTTER

  • 110g LIGHT BROWN

  • SUGAR

  • 110g CASTER SUGAR

  • 2 EGGS

  • 1 TSP VANILLA EXTRACT

  • 285g PLAIN FLOUR

  • 1/4 TSP XANTHAN GUM

  • WHITE CHOCOLATE CHIPS

  • MINI MARSHMALLOWS







METHOD

  1. MELT THE BUTTER IN A MICROWAVE AND THEN MIX IT TOGETHER WITH THE LIGHT BROWN SUGAR AND CASTER SUGAR.

  2. ADD THE EGGS AND VANILLA EXTRACT.

  3. THEN ADD THE FLOUR AND XANTHAN GUM AND MIX.

  4. ADD A HANDFUL OF MARSHMALLOWS AND CHOCOLATE CHIPS.

  5. LINE A SQUARE BAKING TRAY WITH BAKING PAPER AND POUR THE

  6. ADD SOME SPARE CHOCOLATE CHIPS ON TOP!

  7. BAKE IN THE OVEN FOR 30 MINUTES AT 180°C.


IT SHOULD STILL BE QUITE GOOEY IN THE MIDDLE, BUT MAKE SURE IT IS

NOT RUNNY. TAKE OUT OF THE OVEN AND WAIT UNTIL THEY ARE COOL

BEFORE CUTTING AND EATING!
