Homemade Gluten-Free Jaffa Cake Squares 🍊🍊

I used to absolutely love jaffa cakes but I have never found gluten-free versions to be that tasty. So I thought it would be a great idea to make my own massive jaffa cake squares! 🍊🍊

Ingredients

  1. 100g Gluten Free Flour.

  2. 100g Margarine.

  3. 100g Caster Sugar

  4. 1/8 tsp Xantham Gum

  5. 2 Eggs

  6. 135g Orange Jelly Cubes

  7. 180g Dark Chocolate.

Method

  1. Overnight, make the jelly by adding 1/2 a pint of boiling water to the cubes.

  2. Pour into a tinfoil-lined square baking tray (20x20cm) and leave in the fridge overnight.

  3. Remove the jelly from the tray, lifting it out by the edges of the tinfoil.

  4. Mix together the sugar and margarine. Then add the eggs, flour and xantham gum.

  5. Pour into the same lined square baking tray and bake at 180 degrees Celcius for 20 minutes.

  6. Once the sponge has cooled, carefully flip the jelly on top being careful not to break it.

  7. Melt the chocolate and pour over the top of the jelly and smooth it over very carefully.

  8. Leave in the fridge to harden, then cut into squares and enjoy 🍊
